Harvest Selections by Delmonte – 90 seconds to a quick, healthy lunch!

My husband and I tried Delmonte’s New Harvest Selections Santa Fe Style Rice & Beans last evening. These can be eaten as a meal, a quick lunch, or in our case, we had it as a side to our main dish. Let me tell you, this is a WINNER! Quick & Easy to prepare & very tasty! My husband also thought this variety would be good cooked & wrapped in a healthy whole wheat tortilla. (Like La Tortilla Factory tortillas.) He is VERY picky eater so the fact that he likes these should tell you something!

What do I like about this? First of all, it has 40% of your daily recommended vegetables in one little bowl!!! 40% (2 full servings)! I know I have a big problem some days eating healthy and getting my recommended veggies in. This is an easy & yummy way to get 2 full servings of veggies in! The Santa Fe Style Rice & Beans also has just 320 calories, 6 g. of fat, and 4g of dietary fiber. (Which breaks down to about 6 Weight Watchers points if you follow that plan.) Which is a good point value, in my opinion for a lunch or dinner.

When I first heard of Harvest Selections (this coupon is no longer available – I’m sure they will be coming out with another one soon, though!), it looked like a product that would be in the freezer. In my mind, that is where I was thinking it would be. I was wrong, though. These meals do NOT have to stored in the fridge or freezer. They can sit on the shelf next to your canned good items. Which makes it VERY convenient to take on the go!

Since you do not have to store it in a fridge or freezer, it makes it easy to take this to work with you. You could actually just keep a couple on hand in your desk or office for those days when you don’t have time to eat a healthy lunch. Viola, you have a healthy/tasteful lunch right in your desk drawer! Much better than hitting the vending machine or fast food! All you need is a microwave. I could also send these to school with my kids for lunch as they have a access to a microwave at their school. 90 seconds in the microwave is all it takes!

What’s even better? The price. The price averages around $2.24/box. If you can find them on sale or get a coupon, even better! (Stock up on them, then!) Even at regular price, that is at least half price of a unhealthy, fast food lunch!
